mom’s chicken divan
I have very fond memories of my mom making this for dinner every so often. One of my favorite dishes. I tried making it myself for the first time last night and it came out almost just as good as hers..
Ingredients:
3/4 lb chicken (boned & skinned)
2 tablespoons vegetable oil
10 oz package of frozen brocolli florets
1 cup of chicken broth
2 tablespoons of sherry wine
1 can (10 3/4oz) of condensed cream of mushroom soup
1 1/2 cups of minute rice
grated parmesan cheese
Cut the chicken into small chunks and then brown in a large pan with the oil (approx 5 min).
Stir in the chicken broth, sherry, broccoli, and cream of mushroom soup and bring to a boil.
Stir in rice, cover, and remove from heat and let stand for 5-10 minutes (until the rice has soaked up most of the liquid).
Top with Parmesan cheese and put the cover back on to melt.
