This came out really well and was pretty easy to make as there is no crust. I used fuji apples and probably about 50-75% more of them than the recipe calls for..

Ingredients:
2 1/2 cups peeled, cored and sliced apples
1 teaspoon ground cinnamon
1 teaspoon white sugar
1 cup white sugar
3/4 cup margarine, melted
1/2 cup chopped pecans
1 cup all-purpose flour
1 egg, lightly beaten
1 pinch salt

Preheat oven to 350 degrees. Lightly grease a 9 inch pie pan with butter.

Fill 2/3 of the pan with sliced apples. Sprinkle with cinnamon and 1 teaspoon sugar.

In a medium bowl, mix 1 cup sugar with the melted butter. Stir in pecans, flour, egg and salt. Mix well. Spread mixture over the apples.

Bake in preheated oven for 65 minutes, or until golden brown.

Ingredients:
Pumpkin Seeds
Salt

Put the seeds (and maybe some pumpkin guts too) into a baking pan. Salt lightly to tast and put in the over at 350 degrees for about 20-35 mins (until brown). These are a tasty seasonal snack..

baked stuffed shrimp

This is another one of my fond childhood food memories. Dad would spend some time cleaning the shrimp over the sink and mom would let me and my brother smash the shit out of the ritz crackers. Just awesome.. Caution – this dish is about 90% butter!

Ingredients:
1lb of shrimp (de-shell and de-vain)
1 package of ritz crackers
1 stick of butter
garlic powder

Preheat the oven to 350 degrees.

Take the clean shrimp and cut them on the curve and spread them open and lay flat on a glass baking dish.

Melt 1 stick of butter and mix in with 1 package of crushed ritz crackers. Add garlic powder to taste.

Spoon butter/cracker/garlic powder mixture over flat shrimp. And place in the oven.

Bake for about 10 mins (shrimp will appear white when they are done)

Take out and enjoy!
