puerco pibil
Ingredients:
5 pounds pork butt, cut into 2 inch cubes
5 tablespoons annato seeds
2 teaspoons cumin seeds
1 tablespoon whole black pepper
1/2 teaspoon whole cloves
8 whole allspice berries
2 habanero Peppers, cleaned and minced
1/2 cup orange juice
1/2 cup white vinegar
8 garlic cloves
2 tablespoons salt
5 lemons
1 shot of tequila
banana leaves (optional)
After watching Robert Rodriguez‘s 10 minute cooking school on the Once Upon a Time in Mexico dvd I really wanted to try making this. I bought all the spices about a year and a half ago and put the idea on the shelf until yesterday, when I decided to give it a go.
1) Combine all the spices into a coffee grinder (nothing else on this planet will crush the annato seeds the way that you want them) and grind into a dust.
2) Combine all other ingredients into a blender (except the pork) and also mix in the spice mixture. Blend everything to a kind of watery-paste consistency.
3) Put the pork and sauce into a large zip-lock baggie and mix it around.
4) Make a nice layer or two of aluminum foil (couldn’t find banana leaves) and then put the seasoned pork in.
5) Cover the dish very tightly with foil and cook at 325 degrees for 4 hours.
6) When you take the pork out and take the foil off, be very careful! My hand was far away from the hot pan itself and still got burned by all the steam that came flying out.
This stuff is hella-awesome wrapped in a tortilla with some spanish rice. For an added kick I diced up some jalapeno peppers and threw them into the pot when the rice was boiling.
