baked stuffed shrimp 01

This is another one of my fond childhood food memories. Dad would spend some time cleaning the shrimp over the sink and mom would let me and my brother smash the shit out of the ritz crackers. Just awesome.. Caution – this dish is about 90% butter!

Ingredients:
1lb of shrimp (de-shell and de-vain)
1 package of ritz crackers
1 stick of butter
garlic powder

Preheat the oven to 350 degrees.

Take the clean shrimp and cut them on the curve and spread them open and lay flat on a glass baking dish.

Melt 1 stick of butter and mix in with 1 package of crushed ritz crackers. Add garlic powder to taste.

Spoon butter/cracker/garlic powder mixture over flat shrimp. And place in the oven.

Bake for about 10 mins (shrimp will appear white when they are done)

Take out and enjoy!

Went well with the stuffed dates; this was the first time I’ve ever cooked salmon and it worked great! The sauce smelled a little funny to me as I was reducing it, but when you dip a piece of salmon on it it tastes amazing! Highly addictive! Salmon is very tough when raw, but as soon as it starts cooking it falls apart very easily.. I would suggest flipping it as gently as possible and not moving it around to much as it has a tendency to flake apart..

Ingredients:
1/3 cup maple syrup
1/4 cup soy sauce
1 teaspoon adobo sauce from canned chipotles in adobo
4 6-ounce skinless salmon fillets

Whisk syrup, soy sauce, and adobo in pie dish to blend. Add salmon; turn to coat. Let marinate 30 minutes, turning occasionally. Drain marinade into small saucepan.

Heat heavy nonstick skillet over medium heat. Add salmon and cook until slightly charred outside and just opaque in center, about 3 minutes per side.

Meanwhile, boil marinade until reduced to scant 1/4 cup sauce, about 4 minutes. Place 1 salmon fillet on each of 4 plates, drizzle with sauce, and serve.
